Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium saucepan, add 1 tablespoon of coconut oil and heat over medium heat until melted.
  3. Incorporate 12 Werther’s Original Caramels and stir continuously until melted and smooth.
  4. Remove from heat and stir in ¼ cup of unsalted butter, ½ cup of light brown sugar, and ¼ teaspoon of baking soda.
  5. In a large bowl, add the freshly popped mushroom popcorn and pour the caramel mixture over it, tossing gently.
  6. Spread the caramel-coated popcorn onto the prepared baking sheet and bake for about 10 minutes.
  7. Remove from the oven and allow to cool completely before breaking into clusters.
