- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium saucepan, add 1 tablespoon of coconut oil and heat over medium heat until melted.
- Incorporate 12 Werther’s Original Caramels and stir continuously until melted and smooth.
- Remove from heat and stir in ¼ cup of unsalted butter, ½ cup of light brown sugar, and ¼ teaspoon of baking soda.
- In a large bowl, add the freshly popped mushroom popcorn and pour the caramel mixture over it, tossing gently.
- Spread the caramel-coated popcorn onto the prepared baking sheet and bake for about 10 minutes.
- Remove from the oven and allow to cool completely before breaking into clusters.
