Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large mixing bowl, beat together 2 eggs and 1 cup of sugar until pale and creamy.
  3. Stir in ½ cup of melted butter, 1 cup of eggnog, 1 teaspoon of rum extract, and 1 teaspoon of vanilla extract until smooth.
  4. In a separate bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, ½ teaspoon of salt, and ½ teaspoon of nutmeg.
  5. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. If necessary, tent with aluminum foil for the last 15 minutes to prevent over-browning.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
