- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large mixing bowl, beat together 2 eggs and 1 cup of sugar until pale and creamy.
- Stir in ½ cup of melted butter, 1 cup of eggnog, 1 teaspoon of rum extract, and 1 teaspoon of vanilla extract until smooth.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, ½ teaspoon of salt, and ½ teaspoon of nutmeg.
- Gradually add the dry ingredients into the wet mixture, stirring until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- If necessary, tent with aluminum foil for the last 15 minutes to prevent over-browning.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
