Method

Step-by-Step Instructions
  1. Begin by washing 1 pound of stew beef under cold water, then cut it into bite-sized pieces for even cooking. This process should take about 5 minutes.
  2. Heat 2 tablespoons of olive oil in a large, heavy-bottomed pan over medium heat. Add the beef pieces seasoned with salt and black pepper. Sauté for approximately 8–10 minutes until browned.
  3. Chop one onion and one red bell pepper into small pieces, then add them to the pan with the beef. Sauté for an additional 3 minutes, or until the vegetables are tender.
  4. Stir in 3 tablespoons of tomato paste, allowing it to cook and develop its flavors for about 5 minutes.
  5. Pour in 2 cups of water and 1 cup of beef stock, then sprinkle in 1 tablespoon of beef bouillon powder and ½ teaspoon of cayenne pepper. Bring the mixture to a boil, then reduce to a simmer for about 5 minutes.
  6. Stir in ½ cup of peanut butter, mixing well until fully incorporated. Continue to cook for an additional 2–5 minutes until thickened.
  7. Serve your Creamy Senegalese Peanut Stew hot, either in bowls or on plates, potentially with cauliflower rice or your favorite bread.
