  • 4 pieces Chicken Breasts Can substitute with chicken thighs.
For the Sauce
  • 1 cup Sun Dried Tomatoes Choose non-oil preserved.
  • 2 tablespoons Olive Oil or Butter For searing chicken.
  • 3 cloves Garlic Minced.
  • 1 cup Chicken Broth Use gluten-free broth if needed.
  • 1 cup Heavy Cream Can use half and half or a milk-cream cheese mixture.
  • ½ cup Parmesan Cheese Grated.
For Garnish
  • Fresh Herbs (Basil, Parsley, or Thyme) Choose your favorites.

Step-by-Step Instructions
  1. Season both sides of the chicken breasts with salt and pepper. Allow the chicken to rest at room temperature for about 10 minutes.
  2. In a large skillet, heat 2 tablespoons of olive oil or butter over medium-high heat. Add chicken breasts and sear for 5-6 minutes on each side until golden brown. Remove the chicken from the skillet.
  3. In the same skillet, lower the heat and add 3 minced garlic cloves and ½ cup of chopped sun dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Pour in 1 cup of chicken broth to deglaze the skillet. Once bubbling, stir in 1 cup of heavy cream and ½ cup of grated Parmesan cheese. Stir for 3-4 minutes until the sauce thickens.
  5. Return the chicken to the skillet, nestling it into the sauce. Simmer for 2-3 minutes.
  6. Remove from heat and garnish with fresh herbs. Serve warm.
