- Season both sides of the chicken breasts with salt and pepper. Allow the chicken to rest at room temperature for about 10 minutes.
- In a large skillet, heat 2 tablespoons of olive oil or butter over medium-high heat. Add chicken breasts and sear for 5-6 minutes on each side until golden brown. Remove the chicken from the skillet.
- In the same skillet, lower the heat and add 3 minced garlic cloves and ½ cup of chopped sun dried tomatoes. Sauté for 1-2 minutes until fragrant.
- Pour in 1 cup of chicken broth to deglaze the skillet. Once bubbling, stir in 1 cup of heavy cream and ½ cup of grated Parmesan cheese. Stir for 3-4 minutes until the sauce thickens.
- Return the chicken to the skillet, nestling it into the sauce. Simmer for 2-3 minutes.
- Remove from heat and garnish with fresh herbs. Serve warm.
