- Begin by peeling your ripe bananas and slicing them into 1-inch thick rounds. Lay the banana slices in a single layer on a parchment-lined baking sheet.
- Using a teaspoon, spoon about 1 teaspoon of creamy peanut butter onto the center of each banana slice. If you like, create sandwiches by placing another banana slice on top of the peanut butter.
- Once all banana sandwiches are assembled, place the baking sheet in the freezer for about 1 hour, or until firm to the touch.
- In a microwave-safe bowl, combine dark chocolate chips and a tablespoon of coconut oil. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
- Remove the banana sandwiches from the freezer and dip each one into the melted chocolate, allowing excess chocolate to drip off before placing them back on the baking sheet.
- While the chocolate is still warm, immediately sprinkle chopped salted peanuts and a pinch of sea salt over each coated banana bite. Return to the freezer for another 30 minutes.
