Step-by-Step Instructions
  1. Begin by peeling your ripe bananas and slicing them into 1-inch thick rounds. Lay the banana slices in a single layer on a parchment-lined baking sheet.
  2. Using a teaspoon, spoon about 1 teaspoon of creamy peanut butter onto the center of each banana slice. If you like, create sandwiches by placing another banana slice on top of the peanut butter.
  3. Once all banana sandwiches are assembled, place the baking sheet in the freezer for about 1 hour, or until firm to the touch.
  4. In a microwave-safe bowl, combine dark chocolate chips and a tablespoon of coconut oil. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
  5. Remove the banana sandwiches from the freezer and dip each one into the melted chocolate, allowing excess chocolate to drip off before placing them back on the baking sheet.
  6. While the chocolate is still warm, immediately sprinkle chopped salted peanuts and a pinch of sea salt over each coated banana bite. Return to the freezer for another 30 minutes.
