  • 2 tails Lobster Fresh or high-quality frozen
  • 200 g Shrimp Optional alternative
For the Sauce
  • 2 tablespoons Olive Oil Extra virgin
  • 1 cup Shallot Diced
  • 4 cloves Garlic Sliced
  • 500 g Cherry Tomatoes
  • 0.5 cup White Wine Dry variety like Sauvignon Blanc
  • 6 cups Lobster Stock Homemade preferred
  • 150 ml Heavy Cream
For the Pasta
  • 500 g Linguine
  • 75 g Salted Butter Or unsalted with extra salt
For the Stock
  • 1 stalk Celery Chopped
  • 2 pieces Carrots Chopped
  • 1 piece Onion Halved
  • 10 pieces Black Peppercorns
  • 2 leaves Bay Leaves
  • 6 cups Water
For Finishing Touches
  • 0.25 cup Fresh Parsley Chopped
  • to taste Salt For seasoning

Method
 

Preparation Steps
  1. Step 1: Prepare Lobster - Remove meat from lobster tails, cut into bite-sized pieces and reserve shells for stock.
  2. Step 2: Make Lobster Stock - Heat olive oil, add lobster shells, celery, carrots, onions, peppercorns, bay leaves, and water. Simmer for 1 hour.
  3. Step 3: Cook Lobster - Melt salted butter, sauté lobster pieces until opaque and tender, then remove from heat.
  4. Step 4: Prepare Sauce - Sauté shallot and garlic, add cherry tomatoes until bursting, deglaze with white wine.
  5. Step 5: Combine Sauce Ingredients - Add strained lobster stock to the skillet, simmer and stir in heavy cream.
  6. Step 6: Cook Pasta - Boil salted water, cook linguine until 2-3 minutes shy of al dente, reserve pasta water.
  7. Step 7: Combine - Toss linguine with sauce, add reserved pasta water, and fold in cooked lobster.
  8. Step 8: Serve - Plate the dish, garnish with parsley and black pepper, serve immediately.
