Step-by-Step Instructions
  1. In a medium mixing bowl, whisk together 2 eggs, 1 cup of pure pumpkin puree, 1 cup of milk, and 2 tablespoons of melted butter until well blended. Allow to rest for 5 minutes.
  2. In another bowl, combine 1 cup of flour, 2 tablespoons of brown sugar, ¼ teaspoon of salt, and a pinch of ground spices. Whisk thoroughly.
  3. Fold the dry mixture into wet ingredients gently until batter is smooth. Allow to rest for 5 minutes.
  4. Heat a non-stick skillet over medium heat, lightly greased, for about 2 minutes.
  5. Pour ¼ cup of batter into the skillet, swirl to spread. Cook for 1-2 minutes, then flip and cook for another minute.
  6. Transfer finished crepes to a warm plate, stacking them, and cover with a clean kitchen towel.
  7. Spread a layer of Nutella on each warm crepe and add any optional toppings.
