For the Cake
  • 1 box Yellow Cake Mix any brand works
  • 1 pkg Peach Jell-O (not prepared) can substitute with other fruit flavors
  • 3 large Eggs essential for binding
  • ½ cup Oil light olive or vegetable oil
  • 2 cups Frozen Peaches use frozen straight from the bag
For the Frosting
  • ½ cup Salted Butter margarine may alter taste
  • 1 cup Brown Sugar (packed) can reduce for less sweetness
  • ¼ cup Heavy Cream no good substitutes available
  • 1 teaspoon Vanilla use pure vanilla for best flavor

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch cake pan.
  2. In a mixing bowl, combine the yellow cake mix, unprepared Peach Jell-O, eggs, and oil. Blend until smooth.
  3. Chop frozen peaches into smaller pieces and gently fold into the batter.
  4. Pour the batter into the prepared cake pan and bake for 40-45 minutes.
  5. Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Frosting
  1. In a saucepan, combine salted butter, brown sugar, and heavy cream. Bring to a boil over medium heat, stirring continuously.
  2. Remove from heat and stir in vanilla extract. Cool the frosting until it thickens.
  3. Frost the cooled cake generously with the brown sugar frosting.
  4. Slice, serve, and enjoy!
