Preparation Steps

  2. Gently fold in the sliced ripe peaches into the creamy dressing using a spatula.
  3. In a separate small bowl, combine crushed graham crackers, chopped pecans (or sunflower seeds), and brown sugar. Stir until evenly distributed.
  4. Spoon the peach mixture into a large serving bowl, spreading it out for even distribution.
  5. Sprinkle the graham cracker mixture generously over the top of the salad, and add fresh mint leaves as a garnish.
  6. Cover the salad and chill it in the refrigerator for about 30 minutes before serving.
