  • 1 teaspoon Black Pepper freshly ground
  • ¼ cup Flour or cornstarch for gluten-free

  • 4 dried Guajillo Chilies
  • 2 dried Ancho Chilies
  • 2 dried Chiles de Arbol adjust for heat preference
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Mexican Oregano
  • 4 cloves Garlic Cloves fresh
  • 1 medium Yellow Onion or red onion
For Cooking
  • 2 tablespoons Neutral Oil canola or grapeseed
  • 4 cups Beef Broth or vegetable broth
  • 2 leaves Bay Leaves
Optional Toppings
  • ½ cup Diced Onions
  • ¼ cup Fresh Cilantro
  • ½ cup Sliced Radishes
  • 1 whole Lime cut into wedges

Method
 

Step-by-Step Instructions
  1. Toast the guajillo, ancho, and chiles de arbol in a skillet over medium heat for 2-3 minutes until fragrant.
  2. Simmer the toasted chilies with diced yellow onion and garlic in a saucepan covered with water for about 10 minutes.
  3. Blend the softened chilies, beef broth, ground cumin, ground coriander, and Mexican oregano in a blender until smooth.
  4. Cut the beef chuck into 2-inch cubes and season with kosher salt, black pepper, and dust with flour.
  5. Sear the beef cubes in a Dutch oven with neutral oil over medium-high heat for 4-5 minutes on each side.
  6. Combine the seared beef with the blended sauce and bay leaves, and let simmer for about 2 hours.
  7. Serve the Beef Chile Colorado hot, garnished with optional toppings.
