- Toast the guajillo, ancho, and chiles de arbol in a skillet over medium heat for 2-3 minutes until fragrant.
- Simmer the toasted chilies with diced yellow onion and garlic in a saucepan covered with water for about 10 minutes.
- Blend the softened chilies, beef broth, ground cumin, ground coriander, and Mexican oregano in a blender until smooth.
- Cut the beef chuck into 2-inch cubes and season with kosher salt, black pepper, and dust with flour.
- Sear the beef cubes in a Dutch oven with neutral oil over medium-high heat for 4-5 minutes on each side.
