Method
 

Step-by-Step Instructions
  1. In a small bowl, whisk together mayonnaise, sour cream, and yellow mustard until smooth and creamy. Cover and refrigerate for at least 15 minutes.
  2. Slice the focaccia bread horizontally and toast if desired for 2-3 minutes until golden.
  3. Slice the avocado, tomato, and red onion thinly, and pull apart the rotisserie chicken into bite-sized pieces.
  4. Spread a layer of the mustard mayo sauce on the bottom half of the focaccia. Layer provolone cheese, chicken, bacon, lettuce, tomato, onion, and avocado. Season with salt and pepper.
  5. Place the top half of the focaccia on the sandwich and press down gently. Slice in half and serve immediately.
