- In a small bowl, whisk together mayonnaise, sour cream, and yellow mustard until smooth and creamy. Cover and refrigerate for at least 15 minutes.
- Slice the focaccia bread horizontally and toast if desired for 2-3 minutes until golden.
- Slice the avocado, tomato, and red onion thinly, and pull apart the rotisserie chicken into bite-sized pieces.
- Spread a layer of the mustard mayo sauce on the bottom half of the focaccia. Layer provolone cheese, chicken, bacon, lettuce, tomato, onion, and avocado. Season with salt and pepper.
- Place the top half of the focaccia on the sandwich and press down gently. Slice in half and serve immediately.
