Method
 

Preparation
  1. Preheat your oven to 180°C (356°F). Clean the mushrooms with a damp paper towel and trim the stems to create a cavity.
  2. Carefully crack one quail egg into each mushroom cap, adding a pinch of sea salt and black pepper.
  3. Transfer the baking tray to the oven and bake for 5-8 minutes until golden brown and the yolks are slightly runny.
  4. Remove from the oven and let cool for a couple of minutes to thicken the yolk.
  5. Sprinkle parsley over the mushrooms before serving warm.
