Method

Step-by-Step Instructions
  1. In a small bowl, whisk together ¼ cup light mayo, 2 tablespoons ketchup, and 1 tablespoon sweet relish until smooth. Allow to rest for at least 5 minutes.
  2. Chop 4 ounces of corned beef into bite-sized pieces. Heat a skillet over medium heat, add the corned beef, and sauté for about 5 minutes until crispy. Add ½ cup drained sauerkraut and warm for an additional 2 minutes.
  3. In a mixing bowl, combine 1 pound of 96/4 lean ground beef, 2 tablespoons dehydrated onion, 1 tablespoon Worcestershire sauce, and 1 teaspoon kosher salt. Mix gently, form into 4 patties of about ¾-inch thickness.
  4. Preheat grill or non-stick pan over medium-high heat. Cook patties for about 3 minutes on each side or until they reach an internal temperature of 160°F.
  5. After flipping patties, place a slice of light Swiss cheese on each. Cover to melt the cheese for 1 to 2 minutes.
  6. Assemble the burgers by spreading 1.5 tablespoons of dressing on the bottom bun, adding the cheese-topped patty, heated sauerkraut, crispy corned beef, and finish with the top bun.
