- In a large skillet, cook diced thick-cut bacon over medium heat for 5-7 minutes until crispy. Transfer to a paper towel-lined plate.
- Add vegetable oil to the reserved bacon fat in the skillet. Sear the pounded chicken breasts for 2-3 minutes per side until golden brown.
- Transfer the seared chicken to the baking dish and mix softened cream cheese with garlic powder, dill, and chives. Spread over chicken.
- Sprinkle half of the bacon over the chicken and layer with shredded cheddar cheese.
- Bake uncovered for 15 minutes, ensuring chicken reaches 165°F (74°C) internally.
