Preparation Steps
- Preheat your oven to 350°F (175°C) and generously grease a 9x9-inch baking dish.
- In a large mixing bowl, combine 2 cups of rolled oats, 2 teaspoons of baking powder, a pinch of salt, and 1 teaspoon of ground cinnamon. Stir together thoroughly.
- In another bowl, whisk together 1 ½ cups of milk, ¼ cup of maple syrup, 1 large egg, and 1 teaspoon of vanilla extract until smooth.
- Pour the wet mixture into the bowl containing the dry ingredients, gently stirring with a spatula until just combined.
- Gently fold in 1 cup of diced peaches and ½ cup of chopped pecans into the oatmeal mixture.
