Ingredients

For the Dessert Base
  • 2 teaspoons Unsalted Butter Provides richness and moisture; opt for unsalted for better flavor control.
  • 3.75 cups Powdered Sugar Sweetens the mixture and helps achieve that smooth texture; sift before using to avoid lumps.
  • 0.5 cups Nonfat Dry Milk Powder Adds creaminess and improves overall structure; can substitute with full-fat dry milk for a richer flavor.
  • 0.5 cups Granulated Sugar Contributes sweetness to the delightful filling.
  • 0.5 cups Light Corn Syrup Prevents crystallization and gives the treat a chewy texture; don’t substitute it for consistency.
  • 1 teaspoon Vanilla Extract Enhances the overall flavor; use pure vanilla for the best results.
For the Caramel Coating
  • 1 package Caramels Forms the luscious outer layer; feel free to use homemade caramel or butterscotch if preferred.
  • 1 tablespoon Milk Thins the caramel to the right consistency; you can use cream for a richer caramel experience.
For the Crunchy Exterior
  • 2 cups Chopped Pecans Adds that signature flavor and delightful crunch; walnuts can be substituted for a different nutty taste.

Equipment

  • Medium saucepan
  • Large mixing bowl
  • 8-inch square pan
  • Parchment Paper
  • Waxed paper

Method

Step-by-Step Instructions
  1. Begin by greasing an 8-inch square pan with 2 teaspoons of unsalted butter, ensuring the bottom and sides are well-coated.
  2. In a large mixing bowl, combine 3¾ cups of sifted powdered sugar and ½ cup of nonfat dry milk powder. Stir thoroughly.
  3. In a medium saucepan, melt ½ cup of unsalted butter, ½ cup of granulated sugar, and ½ cup of light corn syrup over medium heat.
  4. Carefully pour the warm syrup mixture into the bowl with your dry ingredients. Stir everything together until smooth.
  5. Allow the mixture to cool for about 10 minutes. Divide it into four equal portions and shape each into a log.
  6. While the logs are chilling, melt the package of caramels with 1 tablespoon of milk in a small saucepan over low heat.
  7. Once the logs are firm and the caramel is melted, dip each log into the caramel, ensuring they are completely coated.
  8. Immediately after dipping in caramel, roll each log in 2 cups of chopped pecans, ensuring an even coating.
  9. Wrap each log carefully in waxed paper, sealing them tightly. Store the logs in an airtight container.
