Step‑by‑Step Instructions for Chicken Bacon Avocado Sandwich
  1. In a mixing bowl, whisk together mayonnaise, sour cream, and yellow mustard until smooth and creamy. Cover and chill for 15 minutes.
  2. Slice the focaccia bread in half lengthwise and toast lightly for 2-3 minutes if desired. Slice avocado, tomato, and red onion, and pull apart chicken.
  3. Spread mustard mayo on both sides of the focaccia. Layer with provolone cheese, rotisserie chicken, bacon, lettuce, tomato, onion, and avocado. Season with salt and pepper.
  4. Place the top half of the focaccia on and press down gently. Slice in half and serve with extra mustard mayo on the side.
