Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the baby potatoes with olive oil, ranch seasoning, garlic powder, onion powder, paprika, black pepper, and salt. Toss until well coated.
  3. Spread the seasoned potatoes evenly on the prepared baking sheet in a single layer. Roast in the preheated oven for about 25 minutes until golden brown and tender.
  4. Carefully remove the baking sheet and sprinkle Parmesan and cheddar cheese over the potatoes. Return to the oven for an additional 5 minutes until the cheese melts.
  5. Remove from the oven, let cool slightly, and garnish with parsley and sliced green onions before serving.
