Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a medium bowl, whisk together the granulated sugar, milk, vegetable oil, egg, and vanilla extract until well blended (2-3 minutes).
- In a separate bowl, sift together the flour, baking powder, and salt.
- Fold the dry mixture into the wet ingredients until just combined, being careful not to overmix.
- Gently fold in the diced peaches until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-60 minutes or until golden brown and a toothpick comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely (30 minutes).
- To prepare the glaze, mix powdered sugar, melted butter, diced peaches, and optional vanilla extract. Adjust consistency with cream as needed.
