Method
 

Preparation and Cooking
  1. In a mixing bowl, whisk together the lime juice, minced garlic, olive oil, cumin, paprika, dried oregano, salt, and pepper until well combined.
  2. Cut the chicken into bite-sized pieces, place in a bowl or resealable bag, and pour the marinade over it. Toss to coat and refrigerate for at least 1 hour.
  3. If using wooden skewers, soak them in water for 30 minutes. Thread the marinated chicken pieces onto the skewers.
  4. Preheat the grill to medium-high heat, around 400°F (200°C). Ensure the grates are clean and lightly oiled.
  5. Place the skewers on the grill, cooking for 10-12 minutes, turning occasionally. Ensure the internal temperature reaches 165°F (74°C).
  6. Transfer the skewers to a serving platter. Optionally, squeeze additional lime juice over the top or serve with chimichurri sauce.
