Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine the chicken thighs with soy sauce, dark soy sauce, oyster sauce, black pepper, and corn starch. Let marinate for 10 minutes.
  2. In a large non-stick skillet, heat 2 tablespoons of oil over medium heat. Add the marinated chicken thighs and cook for about 8-10 minutes until golden brown.
  3. Stir in the white parts of the scallions and sauté for an additional 2-3 minutes until softened.
  4. Add the green parts of the scallions just before serving and toss everything together for about 10-20 seconds.
