Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a 9x13-inch baking dish by greasing it with oil or cooking spray.
  2. In a large mixing bowl, combine ground beef, finely chopped onion, minced garlic, breadcrumbs, whole milk, egg, Worcestershire sauce, kosher salt, and black pepper. Mix until well combined.
  3. Press the meatloaf mixture evenly into the greased baking dish and spread ketchup over the top.
  4. Bake in the preheated oven for 25 minutes, until the edges are golden brown.
  5. While baking, bring a large pot of salted water to a boil. Add sliced potatoes and cook until tender, about 15 minutes. Drain and mash with sour cream, milk, unsalted butter, salt, and pepper.
  6. After the initial meatloaf baking, spread the mashed potatoes over the top of the meatloaf.
  7. Sprinkle shredded cheddar cheese and chopped green onions on top of the mashed potatoes.
  8. Return to the oven and bake for an additional 20 minutes until the cheese is golden and bubbly.
  9. Let it rest for 10 minutes before serving, then cut into squares and enjoy.
