Muffin Preparation
- Preheat the oven to 375°F (190°C) and prepare the mini muffin tin.
- In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, melt the butter, then whisk in sugars, egg, pumpkin puree, and oil.
- Combine wet and dry mixtures, stirring until just combined.
- Fill muffin cups about ¾ full with batter.
- Bake for 15-20 minutes until a toothpick comes out clean.
- Let cool for 5 minutes, then dip in butter and roll in sugar if desired.
