  • 1 pound boneless, skinless chicken breasts fresh chicken recommended
  • 4 cloves fresh garlic minced
  • ¼ cup lime juice freshly squeezed
  • 1 teaspoon cumin ground
  • 1 teaspoon paprika smoked paprika recommended
  • ¼ cup olive oil extra virgin
  • 1 teaspoon dried oregano for flavor
  • to taste salt
  • to taste pepper

Method
 

Preparation Steps
  1. Whisk together lime juice, minced garlic, olive oil, cumin, paprika, oregano, salt, and pepper until well combined.
  2. Cut chicken into bite-sized pieces and toss in marinade to coat. Marinate for at least 1 hour in the refrigerator.
  3. Soak wooden skewers in water for 30 minutes. Thread marinated chicken onto skewers.
  4. Preheat the grill to medium-high heat, around 400°F (200°C).
  5. Grill skewers for 10-12 minutes, turning occasionally until cooked through to an internal temp of 165°F (74°C).
  6. Remove skewers from the grill and let rest for a couple of minutes before serving with lime juice or sauce.
