  • 1 cup milk unsweetened almond milk for dairy-free
  • 2 tablespoons butter omit for vegan version
For the Toppings
  • 1 cup grated cheese cheddar, mozzarella, or goat cheese
  • 4 links sausages spicy or sweet Italian sausage
For the Vegetables
  • 1 medium onion sweet onions work well

Method
 

Step‑By‑Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather all your ingredients and equipment.
  2. In a medium saucepan, combine 2 cups of water and 1 cup of milk, bringing it to a rolling boil.
  3. Gradually whisk in 1 cup of polenta and stir continuously for 5-7 minutes until thickened.
  4. Remove from heat and stir in 2 tablespoons of butter and half of the grated cheese, seasoning with salt and pepper.
  5. In a skillet, heat olive oil over medium heat. Add 1 chopped onion, 2 minced garlic cloves, and 1 diced bell pepper. Sauté for about 5 minutes.
  6. Add 4 sliced sausages to the skillet and cook for 8-10 minutes until browned.
  7. In a greased baking dish, spread half of the polenta mixture, layer on the sausage and vegetables, and finish with the remaining polenta and cheese.
  8. Bake for approximately 20 minutes, or until the cheese is melted and bubbly.
  9. Let cool for a few minutes before serving.
