- Preheat your oven to 180°C (356°F). Gently wipe each mushroom with a damp paper towel to remove dirt. Trim stems as needed and arrange the mushrooms, opening side up, on a baking tray lined with parchment paper.
- Crack one quail egg into each mushroom cap, keeping the yolks intact. Season with sea salt and black pepper.
- Bake in the preheated oven for 5-8 minutes until mushrooms are golden brown and eggs firm up slightly but remain runny.
- Carefully remove the tray from the oven and let the mushrooms cool for a couple of minutes.
- Sprinkle the mushrooms with freshly chopped parsley and serve warm.
