  • 4 large eggs freshly scrambled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering but not smoking.
  2. Add 1 cup of diced onion and 1 cup of diced bell peppers to the skillet. Sauté for about 5 minutes until softened.
  3. Crumble 1 pound of breakfast sausage into the skillet and cook for 7-10 minutes until browned.
  4. Stir in 2 cups of cooked brown rice, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and season to taste with salt and pepper. Cook for an additional 2-3 minutes.
  5. In a separate skillet, scramble 4 eggs over medium heat for about 3-4 minutes.
  6. To serve, scoop the sausage and rice mixture into bowls and top with scrambled eggs. Optionally sprinkle with shredded cheddar cheese and fresh parsley.
