  • 1 cup milk Unsweetened almond milk is a great dairy-free alternative.
  • 1 cup sharp cheddar cheese Any cheese can be used, or omit for dairy-free.

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Cut stale bread into bite-sized cubes and layer them at the bottom of the baking dish.
  3. Cook the sausage in a skillet over medium heat for 5-7 minutes, breaking it apart until golden brown. Add chopped mushrooms and spinach, sauté for an additional 3-4 minutes.
  4. In a mixing bowl, whisk together 6 eggs, 1 cup of milk, and 1 cup of sharp cheddar cheese, seasoning with salt and pepper.
  5. Fold the cooked sausage and vegetable mixture into the egg mixture, then pour it over the bread cubes evenly.
  6. Bake in preheated oven for approximately 50 minutes until the center is set and the top is golden brown.
  7. Let the casserole cool for 10-15 minutes before serving.
