  • 1 tbsp Tarragon Fresh herb.

For Cooking

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Pat your Cornish hens dry, tuck the wings, and tie drumsticks with kitchen twine.
  3. In a roasting pan, spread onions, carrots, and potatoes. Drizzle with olive oil and season.
  4. Stuff quartered lemons inside each Cornish hen.
  5. In a bowl, mix butter, truffle oil, herbs, garlic, and seasonings to make herb butter.
  6. Rub the herb butter all over each hen.
  7. Pour chicken stock and white wine into the pan.
  8. Roast hens for 55–65 minutes until they reach 165°F internally.
  9. Let the hens rest for 10–20 minutes before carving.
  10. Serve with favorite side dishes.
