- Pat your Cornish hens dry, tuck the wings, and tie drumsticks with kitchen twine.
- In a roasting pan, spread onions, carrots, and potatoes. Drizzle with olive oil and season.
- Stuff quartered lemons inside each Cornish hen.
- In a bowl, mix butter, truffle oil, herbs, garlic, and seasonings to make herb butter.
- Rub the herb butter all over each hen.
- Pour chicken stock and white wine into the pan.
- Roast hens for 55–65 minutes until they reach 165°F internally.
- Let the hens rest for 10–20 minutes before carving.
