  1. Begin by bringing a pot of water to a boil. Blanch the fresh apricots for about 30 seconds, then quickly transfer them to an ice bath to halt the cooking process.
  2. In a medium saucepan, combine the maple water, plain water, pure maple syrup, freshly grated lemon zest, and vanilla extract. Heat the mixture over medium heat and bring it to a gentle simmer.
  3. Once the poaching liquid is simmering, carefully add the apricot halves, cut-side down, into the saucepan. Allow them to poach gently for about 10 to 12 minutes.
  4. After poaching, remove the apricots from heat and let them cool in the poaching liquid for about 15 minutes. Serve warm or chilled, optionally garnished with fresh mint leaves or toasted almonds.
