  • 1 box Spaghetti
  • 1 tablespoon Salt for boiling water
Sauce
  • 2 tablespoons Olive oil high-quality
  • 3 cloves Garlic minced
  • 1 can Canned tomatoes whole peeled
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried Italian herbs mix of basil, oregano, and thyme
  • 1 pinch Sugar to balance acidity
  • to taste Salt and pepper for seasoning
Garnish
  • ½ cup Parmesan cheese freshly grated
  • ¼ cup Fresh basil for garnish

Method
 

Cooking Instructions
  1. Fill a large pot with water and bring it to a rolling boil. Add salt and spaghetti, cooking until al dente (8-10 minutes). Reserve pasta water, then drain.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant, then add canned tomatoes, smoked paprika, and dried herbs. Simmer for 10 minutes.
  3. Add sugar, salt, and pepper to the sauce. Simmer for 5 more minutes until thickened.
  4. Combine cooked spaghetti with the sauce, tossing gently for 2-3 minutes until well-coated. Add reserved pasta water if necessary.
  5. Serve topped with Parmesan cheese and fresh basil.
